Baking Adventures: Banana Bread inspired by Madelaine Petsch (Date sweetened)

After watching Madelaine Petsch bake vegan banana bread, I had to make some to! I love banana bread, and I was intrigued by the recipe she used from My Darling Vegan since it’s no sugar added/date sweetened.

The recipe calls for all-purpose flour, but I used oat flour instead to make it gluten free (I use Bob’s oat flour.) I didn’t have any coconut oil, so I used canola oil instead, and I accidentally only used 2 bananas instead of four (whoops), but luckily my banana bread still came out really tasty. Of course I had to add vegan chocolate chips too!

I was surprised by how soft and delicious this banana bread came out, especially since it doesn’t have any added sugar. I liked it so much that I made it again a few days later with the correct amount of banana, and it came out even softer.
