I made these baked pumpkin spice chocolate chip donuts from The Vegan 8 Cookbook yesterday, and they came out absolutely delicious, which is no surprise because I love The Vegan 8 recipes! In the recipe, Brandi provides a gluten free option with oat flour, which is what I used, and I used Enjoy Life Semi Sweet Mini Chocolate Chips and Silk Vanilla Soy Yogurt.
These vegan and gluten free donuts came out so fluffy and perfect–honestly I think they’re on the same level as classic fried donuts, which is even more impressive considering they’re baked, gluten free, and oil free as well. Of course they don’t taste fried because they aren’t, but they are still so good…so good that I had 3, and my (not vegan or gluten free) Aunt liked them too and wanted a second one. So good that I felt bad that there was only one left when Luke got home, so I already baked another batch. 🙂
