Y’all, I don’t know about amaranth.
I want to like it because it’s good for you, but I’ve tried making it a few times now, and even though I always follow recipe instructions, it never seems to come out quite right.
This time I followed this recipe from The Full Helping, but it wasn’t even close to being thick and done when it should have been, so I had to up the heat and cook it much longer than the recipe called for. And even when it was “done,” I wasn’t sure if it tasted right (the marinara was fine though.) Like it was edible, but kinda weird…
Have you tried cooking with amaranth? Any success or tips? Is it just an acquired taste? Please let me know in the comments!
