I don’t make sweet potato noodles very often (I usually just bake sweet potatoes whole), but they’re so good, I need to remember to make them more. This time I made Sweet Potato Noodles with Creamy Almond Sauce–the second recipe I’ve tried from Sweet Potato Soul.
I omitted the oil and skipped the red cabbage as well and added extra red pepper instead, and I also added sriracha on top for some extra spice. I really enjoyed the meal, and it was so colorful and packed with veggies. I had some leftover cold the next day too, and it was even better since the flavors had time to marinate. Next time I would probably make it with peanut butter instead of almond butter because peanut butter is just better in my opinion. 🙂
