It was 80 degrees in my apartment in Texas yesterday and yet I still decided to make chili cheese fries and have both the oven and the stove on at the same time. Why do I do this to myself? Oh yeah, because fries are life, lol. (I also drink hot coffee year-round even in 100+ degree weather–anyone else?!)
Thankfully this recipe from the Vegan 8 was worth the heat and effort. The fries were perfectly crispy and so delicious slathered in the chili and cheese (I added the optional cashew butter since I had some leftover from another recipe I made recently, which made it extra rich–yum!) Pro-tip–serve the chili/cheese in little separate bowls if possible, which will keep the fries crispier (I didn’t think of that until after the photo, but I’ll do it next time.)
A huge bonus to this recipe is that it’s oil-free as well (as are all of The Vegan 8 recipes)–I eat oil when I’m out and about some but honestly feel way better when I don’t consume it as much, so I love making oil-free recipes.
For real though y’all, I have never been disappointed by any of Brandi’s recipes–they’re all so bomb! I’m so excited for her cookbook to come out this October!
