Apple Pancakes (Vegan, Gluten & Oil Free)

Ingredients
  

  • Dry Ingredients
  • 1 cup 132g Gluten Free All Purpose Baking Flour (I use Bob's Red Mill)
  • 1 Tablespoon flaxseed meal
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt

  • Wet Ingredients
  • 1/2 cup 124g no sugar added applesauce
  • 1/2 cup 118 ml soy milk (or plant milk of choice)
  • 2 Tablespoons maple syrup
  • 2 teaspoons vanilla extract

  • 1 cup chopped tart apples I used ~1 pink crisp apple
  • Optional: more maple syrup for serving

Instructions
 

  • Chop apple into small pieces.
  • Add dry ingredients to a medium bowl and mix well.
  • In a separate small bowl, whisk together wet ingredients with a fork.
  • Pour wet ingredients into dry ingredients and mix until evenly combined. Stir in chopped apples.
  • Preheat a non-stick frying pan (I used an 8") to medium heat. Once hot, pour 1/3 of the batter into the pan, spreading it out a little with a spoon if needed to make an even circle. Cook until edges are firm and start to brown and large bubbles form in the middle (~1-2 minutes), then flip with a spatula and cook another minute or so until done and remove from heat.
  • Top with maple syrup and serve.
